Ingredients You'll Need
Molasses: Adds rich flavor, moisture, and that classic gingerbread taste.
Fresh and ground ginger: Freshly grated ginger adds a little extra zing, while ground ginger provides the warm, familiar spice.
Ground cinnamon, white pepper, and cayenne: These spices add warmth and depth to the gingerbread flavor.
Brewed coffee: Enhances the richness of the molasses and spices without making the cupcakes taste like coffee.
Swiss meringue buttercream: Made with egg whites, sugar, butter, and vanilla, this silky frosting balances the warmly spiced cupcakes.
Christmas sprinkles and gingerbread cookies: Optional festive decorations that make these cupcakes extra special for the holiday season!

How to Make Gingerbread Cupcakes
1. Make the batter. Whisk together the dry ingredients in one bowl. In another, combine the coffee, molasses, and baking soda, then add the sugar, oil, eggs, and fresh ginger. Gradually mix in the dry ingredients until just combined.
2. Bake the cupcakes. Divide the batter among lined cupcake pans and bake at 350°F for 12–15 minutes, rotating the pans halfway through. Let the cupcakes cool for 5 minutes before transferring them to a wire rack to cool completely.
3. Make the Swiss meringue buttercream. Whisk the egg whites and sugar over simmering water until the mixture reaches 160°F. Beat with a stand mixer until glossy, stiff peaks form and the meringue cools.
4. Finish the buttercream. Gradually add the butter using the paddle attachment, then mix in the vanilla. Continue beating until the buttercream is smooth and silky.
5. Decorate. Pipe swirls of buttercream onto the cooled cupcakes using an Ateco 827 piping tip. Finish with festive sprinkles and gingerbread cookies, if desired.

Swiss Meringue Buttercream Troubleshooting
Swiss meringue buttercream can take a little patience, but don't worry if it doesn't look right at first! Here are a few common issues and how to fix them.
- My buttercream looks curdled. Don't panic! This usually means the buttercream is too cold. Keep mixing, or gently warm the outside of the mixing bowl before beating again until smooth.
- My buttercream looks soupy. The butter may be too warm. Place the bowl in the refrigerator for 10–15 minutes, then continue beating until the buttercream thickens.
- My buttercream is grainy. The sugar may not have fully dissolved into the egg whites. Next time, heat the mixture to 160°F, whisking frequently, and rub a little between your fingers to check that it feels smooth before whipping.
- My egg whites won't form stiff peaks. Make sure your mixing bowl and whisk are completely clean and free of grease. Even a small amount of fat can prevent the egg whites from whipping properly.
Tip: Swiss meringue buttercream often goes through an odd-looking stage before it becomes smooth and silky. Give it time to mix before making major adjustments!

Tips for the Best Gingerbread Cupcakes
Measure your flour carefully. Too much flour can make cupcakes dense. Weighing your ingredients with a kitchen scale is the most accurate way to get consistent results.
Use fresh ginger. Freshly grated ginger adds another layer of flavor that makes these cupcakes stand out from a more basic gingerbread recipe.
Don't overbake. Start checking the cupcakes around the recommended baking time. You want a tender, moist crumb rather than a dry cupcake.
Let the cupcakes cool completely. Buttercream and warm cupcakes don't mix well. Give them plenty of time to cool before decorating.
Use a candy thermometer for the buttercream. Heating the egg whites and sugar to the correct temperature helps you prepare the meringue properly.
Be patient with Swiss meringue buttercream. It can look separated or curdled as you add the butter. Keep mixing before deciding something has gone wrong!

How to Store Gingerbread Cupcakes
At room temperature: Store unfrosted cupcakes in an airtight container for up to 1 day.
Refrigerated: Once decorated with Swiss meringue buttercream, refrigerate the cupcakes for up to 3 days.
Before serving: Let refrigerated cupcakes sit at room temperature until the buttercream softens and the cupcakes are ready to enjoy.

Frequently Asked Questions
Absolutely! Bake the cupcakes a day ahead and store them in an airtight container once they've cooled completely. You can prepare the buttercream and decorate the cupcakes closer to serving time.
This can happen as you incorporate the butter. Continue beating the mixture, as it often comes together as the ingredients emulsify. Temperature can also affect the texture, so patience is important.
Insert a toothpick into the center of a cupcake. If it comes out clean or with a few moist crumbs, the cupcakes are ready. Avoid overbaking, which can dry them out.

GARNISH

- Gingerbread cookies (optional)
Instructions
Cupcakes
- Preheat the oven to 350°F and line a standard cupcake pan with paper liners.
- In a medium bowl, whisk together the flour, cocoa powder, ground ginger, baking powder, cinnamon, salt, white pepper, and cayenne pepper. Set aside.
- In a separate large bowl, whisk the brewed coffee, molasses, and baking soda until well combined. Add the sugar, vegetable oil, lightly beaten eggs, and fresh ginger. Whisk until the mixture is smooth and evenly blended.
- Gradually add the dry ingredients to the coffee mixture, whisking just until the batter is smooth. The batter will be quite thin—this is normal.
- Evenly distribute the batter among the prepared cupcake liners. Bake for 15 to 20 minutes, rotating the pan halfway through baking, until a toothpick inserted into the center of a cupcake comes out with a few moist crumbs attached.
- Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before decorating.
Buttercream
- Add the egg whites and granulated sugar to the bowl of a stand mixer. Whisk by hand until the sugar is evenly incorporated into the egg whites.
- Set the mixer bowl over a saucepan filled with a few inches of water, making sure the bottom of the bowl sits above the water rather than touching it. Heat the water over medium heat.
- Place a candy thermometer in the egg white mixture and continue heating, whisking frequently, until it reaches 160°F, about 10 to 12 minutes.
- Once the mixture reaches temperature, carefully transfer the bowl to the stand mixer. Using the whisk attachment, beat on high speed for 8 to 10 minutes, or until the egg whites form medium-stiff peaks and the mixer bowl has cooled to room temperature.
- Switch from the whisk attachment to the paddle attachment. With the mixer running on low, gradually add the butter, one tablespoon at a time. Add the vanilla and continue mixing until incorporated.
- Increase the mixer speed to medium-high and beat for about 5 minutes, or until the buttercream is completely smooth and silky.
Assemble
- Transfer the buttercream to a piping bag fitted with an Ateco 869 piping tip.
- Pipe a swirl of buttercream onto each completely cooled cupcake. Finish with festive sprinkles and a gingerbread cookie, if desired.
