Peanut Butter Milk Chocolate Puddings

These Peanut Butter Milk Chocolate Puddings have 3 layers of homemade awesomeness! The first layer is a peanut butter pudding made with an all-natural organic peanut butter. Next, is the chocolate pudding layer made with cocoa powder and milk chocolate. Lastly, is the homemade whipped cream and chopped peanuts and grated chocolate that finishes off this decadent nod to retro desserts!

Which Peanut Butter To Use

For the peanut butter pudding in this recipe, be sure to use an all-natural smooth peanut butter. That means the ingredients label should just say “peanuts and salt”.

For The Whipped Cream

My glasses were a little larger than 1 cup so for appearance purposes I doubled the whipped cream recipe for these Peanut Butter Milk Chocolate Puddings, but if you have 1 cup serving glasses you shouldn’t need to double the whipped cream recipe like I did.

Serving Dishes

Make sure to serve the pudding in glass dishes to show off this desserts beautiful layers. 1 cup sized dishes work best.

Whipped Cream Decorating

I used a Wilton piping tip #1M fitted in a piping bag to pipe the whipped cream on top. This is totally optional and a dollop of whipped cream on top is just fine. Whatever style you like, do it!

Make Ahead

Peanut Butter Milk Chocolate Puddings can be made 1 day ahead. Store uncovered in the refrigerator. Top with whipped cream right before serving.

Peanut Butter Milk Chocolate Puddings

Homemade peanut butter pudding, chocolate pudding and whipped cream make up these Peanut Butter Milk Chocolate Puddings.

Ingredients

SPECIAL TOOLS

  • 6 1-cup glasses or dishes
  • Stand mixer or hand mixer
  • Wilton piping tip #1M (optional)
  • Piping bag (optional)

PEANUT BUTTER PUDDING

  • ½ cup sugar
  • 5 teaspoons cornstarch
  • 1/8 teaspoon salt
  • 1 ¾ cups whole milk
  • ½ cup heavy cream
  • ½ cup creamy (smooth) natural peanut butter, made with only peanuts and salt
  • 1 teaspoon vanilla extract

CHOCOLATE PUDDING

  • 6 tablespoons sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons natural unsweetened cocoa powder
  • Pinch of salt
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • 4 ounces milk chocolate, chopped, plus more for garnish
  • 1 teaspoon vanilla extract

TOPPING

  • 1 cup chilled heavy whipping cream
  • 1 tablespoon powdered sugar
  • Chopped peanuts (optional)
  • Milk chocolate shavings (optional)

Instructions

PEANUT BUTTER PUDDING

  1. In a large saucepan, whisk sugar, cornstarch and salt to combine. Gradually whisk in the milk and cream. Over medium heat continue to whisk until mixture comes to a boil. Continue to boil until the mixture is thick, whisking constantly for about 30 seconds. Add the peanut butter to the mixture and whisk until combined and boil until thick, whisking often, about 1 minute. Remove from the heat and whisk in the vanilla extract. Spoon in about 1/3 cup pudding among 6 1-cup glasses or dishes. Chill in the refrigerator uncovered while preparing the chocolate pudding.

CHOCOLATE PUDDING

  1. In a large heavy saucepan, add sugar, cornstarch, cocoa powder, and salt and whisk to combine. Gradually whisk in the milk and cream. Over medium heat, continue to whisk until the mixture comes to a boil and becomes thick, whisking constantly for about 30 seconds. Add in chopped chocolate and boil until the chocolate has melted and pudding is thick. Continue to whisk for 1 to 2 minutes.  Remove from the heat and whisk in the vanilla extract. Set pudding aside to cool for 5 minutes. Spoon about 1/3 cup chocolate pudding on top of each chilled peanut butter pudding. Chill puddings uncovered
    for at least 2 hours.

WHIPPED CREAM

  1. In a bowl of a stand mixer, with the whisk attachment attached, whip cream and powdered sugar on medium-high speed until medium peaks form.  Spoon or pipe whipped cream over puddings and sprinkle chopped peanuts and chocolate shavings on top before serving.

Make Ahead:

Can be made 1 day ahead. Top with whipped cream before serving.
