- 6 tablespoons olive oil
- 4 garlic cloves, minced
- 4 teaspoons reduced sodium soy sauce
- 4 zucchini, trimmed, cut lengthwise into ½ inch thick strips
- Combine first 3 ingredients in glass baking dish. Add zucchini and turn to coat. Marinate 15 minutes, turning occasionally.
- Meanwhile, prepare the barbecue (medium-high heat). Grill zucchini until browned and tender, about 4 minutes per side. Season to taste with salt and pepper. Transfer zucchini to plates.
